  • Eating from the garden all year round is one of my biggest goals for my family. We put so much effort into our growing the food in our garden, let me show you how I can and freeze my harvest so that we can eat the abundance all year round. With this weeks pick I am making a smooth, restaurant style salsa, battering and freezing squash and zucchini to fry in the future, and making a beautiful banana pepper and basil jelly.
    Recipes come from the Ball Book of Preserving.

    We never grew a garden growing up, but I sure remember helping my mom make tamales n baking in kitchen n tortillas. Your kids will have great memories helping mom in the kitchen ❤

    When overwhelmed I core my tomatoes and throw them in a bag in the freezer. When gardening season slows down and it’s cold outside I pull all the bags out and thaw. The skins naturally come off without blanching. I can then make my favorite canning recipes. Salsa’s etc. I love your content and enjoy watching.

      I have done that as well! I try really hard to keep up with them throughout the summer, but I'm sure some will end up in the freezer!

    I just recently started watching your videos and boy am I hooked! Love how you’re not a rebel canner. You’ve done several things that I want to try this year when the veggies come in and can can them. Found the way you do the squash interesting, I may have to try that as my husband doesn’t care for it and it’s just he and I. Your girls helping need and Atta girl! Thank you for the videos!

      There are a few things I'm comfortable rebel canning, but for the huge majority of things I follow the rules closely!

    I have been freeze drying my whole garden. Just wanted to let you know I love your channel a lot. When I watch videos everything is always backwards when reading stuff and all that. I'm wondering if you can fix that. You have harvested a whole lot and that's so wonderful. Food you grow yourself just tastes better to me.

      I'm a bit jealous, I would love a freeze dryer! I'm not sure how to make it not appear backwards, but that is good to know.

    Just found your channel. Love your helpers. I’m amazed at how much you got done. Question - how do you cook your zucchini/squash after you freeze them ?

      The ones I batter, I put directly into hot grease to fry while they are still frozen, the ones I blanch, I use in soups typically.

    I absolutely love your channel. Been busy binge watching your videos. Not trying to be noisy but I noticed in a few of these videos your daughter has a chronic cough? Was that just a sickness or is it allergies? I am only asking because my daughter has something like this too and we've done as much as we can naturally to help with it, I dont want to put her on medicine unless we have too.
